The Riddet Institute are the organisers of this event which will be held at the Rendezvous Hotel, Auckland, from 5-8 November 2017. DOF 2017 is the primary platform for presenting new scientific developments in complex food systems, and their applications to food engineering design, food functionality and food consumption, the concepts of complexity and emergent phenomena in food science (introduced at DOF2015) and two new hot topics: replacements for animal-derived proteins; and effects of food structures on the microbiome of the human gut.
Invited world-renowned experts will present hot topics, and the latest research findings will be presented in short talks and poster communications. Early career researchers and students will have the opportunity to present their research to leading scientists.
