A new PhD opportunity in partnership with The University of Auckland is now open for application. The title of the project is "Serum replacement for cultured meat production" and tackles the challenge of how to replace serum which can be found naturally in meat and introduce that alternative into in vitro meat products. The successful applicant will be investigating the contents of fetal bovine serum, utilising muscle stem cells from New Zealand livestock species of interest to investigate the dependence of satellite cell differentiation on serum concentration, and exploring alternatives to fetal bovine serum including New Zealand plant and algal extracts, and waste stream extracts.
