Alejandra got her PhD diploma in Food Science and Technology at the University of Lleida, Spain. Her PhD research was focused on developing nanostructured food materials for the delivery of active food ingredients, such as natural antimicrobials and bioactive compounds, with the ultimate goal of creating a new generation of edible active packaging materials. Her research work was awarded by the European Federation of Food Science and Technology (EFFoST) and Cargill, in the competition of Student of the Year 2016. Alejandra joint the Riddet Institute as a Postdoctoral Fellow in 2017.
Alejandra is currently involved in the "Bioactive Food Systems" project, funded by the High-Value Nutrition National Science Challenge. This research work is focused on the development of bioactive-fortified food systems utilising microencapsulation techniques to maximize the health benefits in targeted population.
