Thesis Title: Consumption of a kiwifruit extract increases mucus production and maintains mucosal barrier integrity leading to improved gastrointestinal health.
The overall aim of this research is to identify bioactive components in kiwifruit and determine the effects of the bioactive fraction on the mucous layer of the gastrointestinal tract. Different kiwifruit cultivars will be fractionated and the effects of each fraction on mucin production and the mucosal layer of the gut will be investigated using a biological model. The fractions that show the best outcomes for gut health will then be characterised and mechanisms of action determined.
