Research focuses on the application of mass spectrometry to both targeted analytical chemistry and untargeted metabolomic analyses of plant and mammalian samples. Currently applying these methods to human sample matrices (breast milk, plasma, urine, adipose and muscle tissue, breath), measuring a wide range of primary and secondary metabolites, such as amino acids, organic acids, lipids, and phenolics. The current studies focus on two High-Value Nutrition National Science Challenge human health outcomes, 1) Peak Nutrition for Metabolic Health – improved biomarkers for understanding Type-II diabetes in an Asian population, and 2) Gastrointestinal Health – new biomarkers for inflammatory bowel syndrome and the mechanism of food on these new biomarkers.
