Thesis Title: Utilisation of non-conventional sources of proteins for future food system
The project is aimed towards physiochemical characterization of insect (cricket) powder and developing a model application by utilization of available technologies in a consumable food format. Edible insects is a growing area of interest to many researchers and lack of scientific literature on these has motivated me to take part in this regime and contribute to the scientific account. Edible Insects are believed to be good source of protein and other nutrients such as essential fatty acids and minerals. Thus it is important to understand their physiochemical properties in order to develop suitable application as Raw material or functional ingredient in food.
