Zheng Pan is a dedicated Postdoctoral Researcher specializing in Complementary Nutrition at the Riddet Institute in New Zealand. He holds a PhD in Food Technology from Massey University, where his research delved into the intricacies of heat-induced protein interactions in sheep milk and the consequential effects of processing on the gastrointestinal digestion behavior of this unique milk type. In his current role, Zheng oversees multiple projects, focusing on unraveling the functionality of recombinant food ingredients, with a particular emphasis on proteins and lipids. Additionally, he collaborates closely with the innovation team, contributing to the development of intellectual property in the realm of healthier and more sustainable foods.
