Milk Magic at Cawthron Inspire Festival

September 2023 - Riddet Institute scientists Dr Mike Boland, Dr Mahya Tavan, and Patricia Soh ran a workshop for school kids on "Milk Magic" at the Cawthron Inspire Festival at the end of August.

The annual festival in Nelson gives children the opportunity to get hands on with learning in STEAMS (Science, Technology, Engineering, Arts, Maths, and Society). 

Dr Boland, Dr Tavan, and Ms Soh demonstrated how heat, chemical and enzymatic treatments could alter the structure of milk proteins and turn them into other products, like butter, cheese and casein.

The students, ranging in age from eight to thirteen years old, were hands on in the experiments, getting to make and taste their own products.
