Dr. Alejandra Acevedo-Fani is a Senior Research Officer at the Riddet Institute, Massey University. She holds a B.Sc in Food Technology and graduated with a Ph.D. in emulsion-based delivery systems from the University of Lleida, Spain. Her research interests cover several aspects of food colloids and digestion, bridging the gap between scientific discovery and industry application. Dr. Acevedo-Fani currently leads a research team with several lines including 1) discovery of functional lipid and protein ingredients from plant-based materials, 2) emulsion systems to improve nutrients absorption, and 3) food matrix effect on human digestion using in vitro and in vivo models. Alejandra is Principal Investigator of the Riddet Institute Centre of Research Excellence (CoRE) and is the scientific co-founder of one start-up company on plant-based dairy alternatives (ANDFOODS).
