Jessie is a Postdoctoral Research Fellow at the University of Otago. She completed her PhD in Pharmacology in 2022, where her research focused on investigating the mechanisms underlying fructose-induced hepatic insulin resistance. In 2023, she began working with the Riddet Institute, where she developed an interest in novel food processing techniques and their influence on health outcomes. Her current research bridges pharmacology and food science, with a focus on developing functional foods that support gut and metabolic health.
