Juliana earned her PhD in Chemical Engineering from the University of São Paulo, Brazil, in 2018, where she studied the effects of conventional (LTLT) and innovative (microwave) processing technologies on human milk components such as oligosaccharides and immunoglobulins. From 2018 to 2021, she was a Postdoctoral Fellow at the Riddet Institute, investigating the impact of thermal processes on enzymes from milk of different species (bovine, ovine, and caprine). Currently, as a Research Officer at the Riddet Institute, her research focuses on the digestion of carbohydrate- and protein-rich food combinations using a dynamic in vitro gastrointestinal model.
