Custan George Fernandes is a Postdoctoral Research Fellow and bioprocess scientist from India, with a strong track record of conducting accurate, reliable, and published research in the field of biotechnology. He completed his doctoral studies at the Institute of Chemical Technology, Mumbai, India, in 2022.
Following his PhD, he gained three years of industrial experience along with advanced research training, developing strong hands-on expertise in bioprocess engineering, and fermentation, scale-up, enzymology, chromatography, and molecular biology. Before joining the Riddet Institute, he was working in Laurus Bio Pvt. Ltd.
At the Riddet Institute, his work focuses on developing bioprocess platforms for fungal and yeast systems, with the broader goal of helping create animal-origin-free foods. This research aims to support policymakers in exploring how future food innovations could shape regional and national food systems.
