Dr Annu Mehta is a Research Officer at the Food Experience & Sensory Testing (Feast) Lab at Massey University. She completed her PhD in 2024 at Lincoln University, New Zealand. Her research focuses on future foods, with a strong emphasis on understanding consumer choices, attitudes, behaviours, preferences, and product interactions.
Dr Mehta applies advanced sensory and consumer science approaches, integrating both explicit and implicit measures to investigate how individual differences influence product choice, preference, and the long-term adoption of emerging food products. She has a particular interest in using implicit methodologies, such as eye tracking, to uncover subconscious drivers of perception and decision-making that are not always captured through traditional self-reported measures. By integrating these deeper behavioural insights with traditional consumer research, her work seeks to bridge the gap between consumer insights and real-world behaviour.
