Dr Dongdong Ni completed his PhD in Food Science, Nutrition, and Analytical Chemistry at The University of Queensland (UQ), focusing on the interplay between food structure, human physiology, and appetite regulation. Following his doctoral studies, Dr Ni undertook postdoctoral research at UQ and has been a CERC Research Fellow at CSIRO Agriculture & Food since 2023. He also holds an Honorary Fellow position at UQ (from 2023 to present). Dr Ni's research integrates oral processing, gastrointestinal digestion, and gut fermentation with food composition, flavour, structure, and microbial interactions to understand their combined impact on health and nutrition. His previous work explores sustainable proteins and bioactive peptides for functional food and feed applications, supported by advanced tools such as proteomics, bioinformatics, NIR/MIR spectroscopy, and in vitro digestion and gut fermentation models. 

Dr Ni is now focused on enhancing nutrition for the elderly, including model food design, the development of dynamic in vitro digestion protocols, and the application of modelling approaches (e.g. machine learning) for precision nutrition.
