Michelle is a Professor of Food Science. She is the Head of Research in School of Science. She obtained her PhD from Monash University, on development of an in vitro digestion model (in vitro physicochemical upper gastrointestinal tract, IPUGS). She worked as a post-doctoral research fellow in Massey University prior to joining AUT University in 2012.
Her research is focused on development of value-added foods and examination of the digestibility patterns of those foods using the in vitro digestion model. Currently she is working on enhancing the digestibility of meat, seafood and plant-based food products with the use of different food processing methods. She is also working on application of fruit and vegetable peels to develop edible coatings.
