3 June 2025 - Riddet Institute’s expertise in food structure and nutrition was on display at a conference in Beijing last month, with Prof David Everett providing the keynote presentation.
The Ninth International Symposium on Dairy Cow Nutrition and Milk Quality was held in Beijing, China, from 9-11 May, and focused on the latest progress in dairy science and technology.
The conference was organised by the Chinese Academy of Agricultural Sciences, along with the American Dairy Science Association (ADSA). Prof Everett is the incoming President of the ADSA, and spoke in that capacity, as well as in his role as Riddet Institute Principal Investigator.
Prof Everett’s keynote address was on the topic of the structural matrix of milk and how it relates to bioaccessibility of nutrients.
“The structure of dairy food products influences its nutritional potential,” Prof Everett says. “The way to change structure, and therefore nutritional value, is to process milk and dairy products differently.”
Prof Everett says the international conference was well attended, and was an opportunity to again highlight the Riddet Institute’s world standing in food structure and nutrition.
Prof Everett is not only a Riddet Institute Principal Investigator and expert in food structure, but also the Institute’s Stakeholder Relationship Manager. He said the three-day conference was also an opportunity to build collaborations and promote cooperation among the international scientific community and showcase Riddet Institute’s expertise.
A delegation from the Chinese Academy of Agricultural Sciences visited the Riddet Institute in February 2025.
